Clarrie Greenwood, Cheese stall holder in Accrington Market Hall
I bet most of you remember Greenwoods cheese stall in Accrington Market Hall.
Clarrie Greenwood started selling his cheeses in Skipton, but when a stall came empty in the Market Hall, he made a wise move!! This was around the 1940's. In those days there was only 3 types of cheese - Lancashire MILD, TASTY AND MEDIUM.

Me too.
Unfortunately, the Greenwood's stall is no longer there - but some Greenwoods cheese can be bought at a butchers in the market hall - G. Feather.
However, when I asked for some of the cream cheese and onion today, the butcher said that he didn't have any and had never been asked for it before. :-(

I have done it willow -- easy peasy
A square of open weave cloth filled with well fermented kefir curd (whey drained off), tightly knotted and then tied to a wooden spoon handle to suspend it over something to catch the drips
