Offal
 
After the Haggis thread, I was wondering what other type of delicacies people like. Have always loved Black Pudding (especially from Bury) Tripe is a favourite too but not cooked, pound of tripe and a plate of chips with lots of salt and vinegar. Pigs Trotters are very tasty as well and out with liver kidneys and I'll fill mi boots, cow heel pie ain't bad too, if your Desperate:D

I love lamb's liver fried in butter with onion and garlic.
I also make my own chicken liver pate, with garlic, thyme and brandy.
I don't much care for other forms of offal, but can eat kidney if it is in a steak pie.

I'm not a great lover of tripe really coz it dont really taste of owt, needs plenty of Vinegar and pepper really. By the way..what happened to Elder? You never see that nowadays! I do love Kidneys though and Lambs Liver and Chicken Livers (Lovely floured and flash fried with a bit of Chilli and Garlic with a touch of Port!!). Ive also eaten some animals testicles in Spain but cant remember which ones. Also at a Chinese in London i once had Baby Pigs Intestines stuffed with Shrimp Paste!! Different!!

Eeeeew, don't like any of those things.......tripe is like sn*T......can't be doing with it.
Liver......went off that after I saw a post mortem of a fella with liver cancer.....kidneys....they smell like wee-wee when you cook 'em.......sheeps brains....yuk......sweetbreads, no thanks........no-one has mentioned pizzle(my dad used to eat that, but it looked disgusting)....my dad used to like Elder too, but i never could put it in my mouth....so I haven't tasted it but I reckon it would taste as bad as it looks.

Tripe: raw with salt and vinegar
Kidneys: flambeaud with mushrooms in a wine and cream sauce
Liver: preferrably ox liver, soaked overnight in milk, sliced, patted with a little butter and grilled
Black pudding: as it comes
Brawn: on a sandwich with mayonnaise

I've eaten lambs' fries but haven't seen them on sale for years, also ate camels' "fries" just once. I'm not keen on pigs' trotters but I would eat them. Never ate a pizzle - yet! :D

spuggie bought 4 black puddings to go back up to scotland with .. told him if he left them in my fridge they'd either go in the bin or be offered on accyweb.... he didnt forget to take them home!!!

I've just remembered sweetbreads, can you still buy them? It's a very long time since I've had them but I think I liked them.

I love all offal. Liver kidney heart sweet breads blood puddings etc. I will eat almost everything apart from tongue. The thought of french snogging a cow really doesnt do it at all for me. :-)

Will eat liver, kidney and tongue, like black pudding with lots of English Mustard, tripe is minging and I wouldn't give it to a dog. Never tried anything more "exotic" than that, don't think I would want to.:rolleyes:

Well I've just finished cooking a full cows tongue.. What a hassle it was to get, had to order a couple in the end. And they aint cheap, but what a huge piece of meat! I'm sure when I was younger you could pick these things up at any butcher.
By the way, where are all the butchers in accy? I ended up going to the one on Union Road in ossy for them.

Every cow has a tongue Roy but there are not many butchers left anywhere....sorry state of affairs.

Not fond of tongue or cheek either :D(that's probably because I have enough of my own).

when I was but a girl I used to work in a cooked meat shop in town, Tattersalls used to supply our Black Puddings....Monday was our delivery day....they would arrive hot and steaming.....and the boss (Anne) would buy two for sixpence and put a whole load of picallilli on them and eat then with great enjoyment......she liked the fatty puddings, and could always pick ot the fatty ones.......YUCK!

I absolutely love pigs trotters, chunks of buttered doorsteps to accompany them, absolute bliss --------- so when I was in a local Asian cash & carry the other day, I espied these tweedy legs that almost resembled trotters! "What are they?" I asked. I think the reply was "sheeps feet" but English was definitely not the first language there, "What do you do with them" I asked rather stupidly, I can't tell you the reply as I didn't understand it myself:confused: Anyway, I bought a couple and boiled them up for supper. They STANK!! and after retrieving them from the boiling water, I tried to find something edible to eat - - but they were all skin and bone - literally!!

Is there anybody out there that can tell me what I should have done with them? Are they edible? or maybe they are sold to cook as stock or something? Has anyone tried them??

Wouldn't see meat going to waste elsewhere in the world!.....Kidneys, oxtail, tongue, tripe, heart, trotters, black pudding, chitterlings, liver.....All wonderful if cooked properly and imaginatively. Sad that we let our preconceptions govern our palates and that we sanitize the food industry in this country. Too many of us are so far removed from the business end of farming.....Perhaps, we need to get back to that. Then we might give a little more respect to food.......

Glorious! Gelatinous, sweet flesh. Like most great food, very messy to eat. Had them in Singapore with honey and chilli coating....Can still taste them now. Brilliant cooked with Madeira as well......

Used to get them for next to nowt but the celeb chefs have repopularised them.........

Mind you, with the credit crunch, maybe we'll all be rediscovering cheaper cuts.....Nice bit of mutton slow coked with quinces or Bath chaps with apricots.....Heaven!

Certainly not a stupid question if you have never tasted them!:p Forget the fancy recipes, just simmer them for around 3-4 hours, (I used to buy them from a local (not local as in Lancashire) butcher that used to steam them overnight. After getting them home, I would boil them for around 30 minutes to get them piping hot and just tuck into them with salt and fresh uncut bread and butter.) Check to see if your butcher part cooks them or not.

What do they taste like? hard to describe but you eat everything except the bones, the skin is particularly nice even the bits with tufts of hair, and leaves you with sticky fingers. Use your teeth to get the little strands of meat amongst the gristle and gelatine around the toes.
