Parkin/ Treacle toffee
 

Hi lads and lassies

Has anyone got some good Lancashire recipes for Parkin and treacle toffee , Cos its getting near bonfire night and i want to introduce the southern folk to the good stuff.

Its hard to find good parkin or treacle toffee down here..

Are you telling us that southerners do not understand these delicacies? I must have a discussion about this with Busman. He thinks treacle is that golden stuff we know a s syrup.

I shall have a look for a recipe and let you know what I find.

Ahhh, the delight's of bonfire nights of old. Parkin made with oats, and treacle toffee made with Treacle mined in Sabden. And plates of hot, home-made potato pie with mushy peas and red cabbage. A couple of sparklers, a few pretty Roman Candles and Catherine Wheels and a roaring fire topped off with incompetant and corrupt Council officials. Bring back the old days I say.

Alas the Sabden treacle mines are no more. Could it be that the bogarts finally ate the last of the treacle seams?

i thought they had some in darwen? tracle mines?
or am i being led up the garden path in that assumption

As any good Basher will tell you, the best treacle mines are in Baxenden. They are still in full production and, unbeknownst to most people, this is one of the the secret ingredients in Hollands Pies and Puddings. I think the other secret ingredients have something to do with fallout from Baxenden Chemicals but please don't quote me on that.

Yours is the best ive ever tasted and the best most of my friends have ever tasted.

Come to think of it you haven't made me any for ages can i have some more please, please you are the best cooker in the world please, yum yum hmmm

My parkin stays a secret but if i can remember the recipe i will pass it on to you.

Mez and I were reminiscing yesterday about bonfire toffee - nearly treacle toffee but not quite. We seem to remember it had some treacle, some syrup and a dot of vinegar. Can anyone remember a recipe for this fantastic stuff? Guaranteed to pull out fillings faster than any dentist!

It was chewier than anything in the shops today wasn't it? I remember my Gran put the vinegar in for some specific reason but I can't recall what. Maybe there's something about it amongst her old recipes. I'll have a look and see what I can find.
