Recipe for pastry?
I am trying to find a recipe for the type of pastry that you get Hollands / Oddies potato pies.
Does anyone know of the recipe? I can make standard shortcrust pastry but not the softer pastry that you get on these Lancashire pasties and pies. As I live in Switzerland I'm desperate for a proper pasty! |

I am told that the pastry on Hollands steak pudding is just shortcrust pastry that is steamed rather than baked.

I know the exact recipe used for the pastry in Oddies pies, but it's a secret. ;)
One thing I can tell you is that they make it using hot water, in which the fat is melted before adding it to the other ingredients. It's known as a 'hot paste' and makes it much shorter than a normal pastry. |
