When you fire the water gun or hose, you need to make sure you're out of sight. That way, the cat associates pooing your the garden/getting wet, rather than associating seeing you/getting wet. It doesn't take many soakings.

When a cat approaches a lemonade bottle on its side with water in it sees a distorted image of 'another cat' through the bottle which is supposed to frighten it off.
