Ohhhh now your talking :D

I love Cheese and Egg!! My mum used to always make it when we were little, and the recipe came off her Gran.

I still have it to this day. I love the cheese when it goes all brown and crusty round the edges! LOVELY

Not in this house they don't.

No turkey twizzlers and alphabites here. :)

best done in a tin plate under the grill than in the oven and served with a dollop of brown sauce

I had that for my tea on monday night, the wife was at work, so thought what can I have, so I cooked three whole spuds in the microwave, in there skins, then flatened them out with a fork, then gratted cheese on top, then cracked a couple of eggs on top, finished off in the oven. It ws heaven.

Re: cheese and egg

Do you just break the eggs on top , like a capricciosa pizza or do you beat them first?

MargaretR 10-04-2008 23:22

Re: cheese and egg

I just break the egg into a hollow on top of the grated cheese. Add a drop of milk and a knob of butter onto the yolk to stop it getting leathery

pam1 11-04-2008 14:56

Re: cheese and egg

:dancedog: right here it goes grate some cheese put milk in a knob of butter put in oven when done drop your egg in just for 5mims.

Re: cheese and egg

LINDASY ORMEROD YOU DO NOT BEAT IT IN, YOU JUST CRAKE THE EGG AND LET DRIP IT ON TOP OF YOU CHESSE WHEN COOKED. YOU WILL ENJOY :dancedog

That's how we used to have it Steeljack .. gives a lovely crust on top ... :D

Trouble is no cooking cheese anymore, which was slightly stronger and more solid .. the cheese would stretch on your fork as you pulled it out from the tin.

thought it was just regular plain Lancashire cheese ? kind of crumbly , and none of the fancy additives like chives , pimentos or other stuff they put into modern day "heritage" cheeses

Re: cheese and egg

My gran always used Lancashire cheese

I think it was called cooking cheese because it was getting a bit stale,,towards the end ,,,it was before the prepacks,,,when they would cut a chunk off a very large cheese and weigh it ..Those were the days when food tasted of real food:egged:

Re: cheese and egg

I would reckon your best chance for cooking cheese would be the cheese stall on the outside market, an if I recall it was just the bits and pieces left over when folk had asked for a specific weight, then all grated up together giving that "distinctive " flavour.

Re: cheese and egg

I've had it for breakfast too, throw some tomatoes in and a couple of rashers of bacon on the top, make a good brekky.

I used to love the cheese and egg thing, but we always put milk in as well. I can eat the cheese, the egg or the crusty bread now due to food intolerances/allergies :(
