1.Fry or grill 5 or6 good sausages . (preferably cumberland from the butchers on burnley road near sydney street. Slice and part boil some potatoes. When the sausages are nicely browned remove them from frying pan anput two sliced leeks into the remaining juices. Add 2 crushed garlic cloves. 1/4 pint of stock and 1/4 pint of apple juice or cider,and some sage about 1 tablespoon. Season with salt and pepper then add 2 tablespoons of cornflour mixed in 4 tablespoons of cold water. Cut the sausages into 1" pieces and add to the pan. cook untill the leeks soften. transfer to an ovenproof dish . Layer the potatoes over the mixture. grate some sharp cheese over the top and place in pre heated oven 190c fo about 30 minutes until cheese goes golden brown. BUUUUUUUUUUUUUUUUUtiful
