Forget it, Janet. I asked our butcher in the village what he makes it from and he said he only uses prime pork - but he would say that wouldn't he?
When I said I'd prefer if it was made from brains he said oh yes, it
could be made from that. He didn't want to lose a sale.
Has anyone ever had lambs' fries? My mother gave them to me for years before she told me what they were. 
(Hint - they come in pairs).
