Devilled Kidneys is a Victorian English breakfast dish consisting of lambs kidneys cooked in sherry,
Worcestershire sauce, cayenne pepper and cream. Recipes can vary depending on which part of the country it’s prepared. The Yorkshire recipe is:
Ingredients 2 slices fresh bread, cut from a crusty loaf 1 Large knob of butter 4 lambs kidneys, chopped and cored 2 tbsp medium dry sherry 1 tsp Dijon mustard 1 tsp English mustard ½ tsp cayenne pepper 1 tsp Worcestershire Sauce 2 tbsp double cream Salt and pepper 1 tbsp fresh parsley, chopped, to garnish
Even though a breakfast dish it is often washed down with a glass of black velvet! (Guinness & Champagne)
