yes if it was off it would curdle
i used to run a little back of the beyond pub and we had a bottle on the shelf for a year and a half before i left and it was still ok (one old lady used to come in and have one every now and again-- from the same bottle)
the only thing i would do is wash the crusty bits off from round the neck
also baileys and amaretto is v.v.nice (irish nut)
