This is one of my all time favourite recipes, especially when I was at school.
EVE’S PUDDING
FAT FOR GREASING
450g / 1lb COOKING APPLES
GRATED RIND OF LEMON. I PREFER TO USE LEMON JUICE INSTEAD.
75g / 3oz DEMERARA SUGAR.
75g / 3oz BUTTER OF MARGARINE.
75g / 3oz CASTER SUGAR.
1 EGG, BEATEN.
100g / 4oz SELF-RAISING FLOUR.
1tsp OF MIXED SPICE ( OPTIONAL )
GREASE A 1 LITRE / 1 ¾ PINT PIE DISH. SET THE OVEN AT 180C / 350F / GAS 4. PEEL & CORE THE APPLES AND SLICE THINLY INTO A LARGE BOWL. ADD THE LEMON RIND / JUICE, WITH THE DEMERARA SUGAR. STIR IN 15ml /1tsp OF WATER, THEN TIP THE MIXTURE INTO THE PREPARED PIE DISH.
IN A MIXING BOWL, CREAM THE BUTTER OR MARGARINE WITH THE CASTER SUGAR UNTIL LIGHT & FLUFFY. BEAT IN THE EGG. FOLD IN THE FLOUR LIGHTLY AND SPREAD THE MIXTURE OVER THE APPLES.
BAKE FOR 40-45 MINUTES UNTIL THE APPLES ARE SOFT & THE SPONGE IS FIRM, SERVE WITH MELTED APPLE JELLY & SINGLE CREAM OR GREEK YOGHURT.

VARIATIONS
INSTEAD OF APPLES, USE 450g / 1lb APRICOTS, PEACHES, GOOSEBERRIES, RHUBARB, RASPBERRIES OR PLUMS.
