ok so this aint baking but its a basic recipe.....its what i've just made for tea
Leek and Potato Soup
3 leeks, chopped into 1/2" cubes
3 or 4 potato's chopped into 1/2" cubes
( you need roughly the same amount of potato's as leeks, but its not critical,
just chuck a few in...)
150g butter ( just a big lump of it will do, its not critical either )
salt & pepper
some cheese
Chicken stock ( maybe 1 1/2 pints )
Slowly cook the leeks in
the butter for 10 mins without browning them.
Season with salt & pepper ( to taste, i
think its best with loads of pepper )
Add the potato's and stock.
Bring to the boil &
then simmer for 20 mins.
Put half of the soup in a blender and blend till nice & smooth
Put it back in the pan & stir for a few mins.
Serve with grated cheese over the top of
the hot soup ( so it starts to melt in ) and nice fresh chunky bread.
