I actually think Lancashire Cheese is the best cheese for cheese on toast, as others have said, it must be done under the grill though, and it needs to be Crumbly Lancs, not Creamy or Tasty Lancs, which tends to release its fat content when heated!...I sometimes spread some Mustard on the bread before putting on the Cheese, and pop some sliced tomato on top too
