Autumn Recipes
 
Anyone have any good Autumn recipes?
For example with apples, pears, cabbage, carrots etc.

This is a serious request - please don't send me RABBIT recipes!

                TEALEAFS STEAK STEW WITH DUMPLINGS

You need for the stew:

1lb of braising steak (don't muck around with 450gms)
coupla carrots, onion
spoonful o flour
herbs to yer fancy (include spig o thyme)
Oxo cube (saves time)

Dumplings:
2 oz veg suet (don't bother trying to get it from ASDA)
4oz flour
More herbs (prefeably fresh to garnish)

Method:

bung some oil in a pan & heat up, chop up yer carrots & onion & bung them in to; chop up the meat & sling that in to with the flour........if you've any wine from last nights bash, pour in and reduce...add your Oxo cube in a pint of hot water & cover and simmer for an hour.....

Meanwhile, mix your suet and flour togeather into a dough with a bit of water and make 8 dumplings

Bung 'em on the top of the stew for a further half hour

Spoon out, serve hot.

Viola! A good winter stew to warm your bones.


P.S. If beef is not available, try rabbit.....

I bought some lamb shanks and am going to have a go at lancashire hotpot, anyone got any receipe's for that?

I'll try your recipe too Tealeaf! Will be needing it, I can see from my office the first snow falling on the highest Dolomite mountains, Brrrr.... have to get that jacket out soon I think...

Callums Bistro recipe for hot pot is in tonights telegraph, I know you can't get it so I will post it, here goes (serves 4)

12 lamb neck chops, 4 lambs kidneys,2kgs spuds, 1kg onions, 50g butter (not marg) fresh thyme, salt and pepper  1 litre lamb or chicken stock.
Set oven to 160  celcius/ 325F
peel and thin slice the spuds, thinly chop the onion
melt butter and brush over the bottom of the casserole dish
Cover bottom of dish with half the onions, add a layer of 6 lamb chops and half the kidneys, season then repeat the layers, top layer is spuds brushed with butter, add some stock and put in oven for 1 hour 45mins with lid on.
Remove lid and brush with butter again and cook for further 30 mins.

Let me know how it goes, as I never cook meself ( no point making all that just for me)
If I ever get wed again, Findus will go out of buisness ;D

I think Callums missed out on the Carrots..
