Shrove Tuesday
 
For those of you who havent realised yet, its pancake day today, like last year they havent advertised it like they used to on TV......just reminding you though :D:D:D

I have just looked on the Mysupermarket site at several pancake mixes.
What a rip off! They are charging for salted flour with a bit of skimmed milk powder in it and 'add your own egg'.

Ingredients
For the pancake mixture:
110g/4oz plain flour, sifted
pinch of salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
50g/2oz butter
To serve:
sugar
lemon juice/orange juice
Method
Sift the flour and salt into a large mixing bowl with a sieve held high above the bowl so the flour gets a airing. Now make a well in the centre of the flour and break the eggs into it. Then begin whisking the eggs - any sort of whisk or even a fork will do - incorporating any bits of flour from around the edge of the bowl as you do so.

Next gradually add small quantities of the milk and water mixture, still whisking (don't worry about any lumps as they will eventually disappear as you whisk). When all the liquid has been added, use a rubber spatula to scrape any elusive bits of flour from around the edge into the centre, then whisk once more until the batter is smooth, with the consistency of thin cream. Now melt the 50g/2oz of butter in a pan. Spoon 2 tbsp of it into the batter and whisk it in, then pour the rest into a bowl and use it to lubricate the pan, using a piece of kitchen paper to smear it round before you make each pancake.

Now get the pan really hot, then turn the heat down to medium and, to start with, do a test pancake to see if you're using the correct amount of batter. I find 2 tbsp is about right for an 18cm/7in pan. It's also helpful if you spoon the batter into a ladle so it can be poured into the hot pan in one go. As soon as the batter hits the hot pan, tip it around from side to side to get the base evenly coated with batter. It should take only half a minute or so to cook; you can lift the edge with a palette knife to see if it's tinged gold as it should be. Flip the pancake over with a pan slice or palette knife - the other side will need a few seconds only - then simply slide it out of the pan onto a plate.


To serve, sprinkle each pancake with freshly squeezed lemon/orange juice and sugar, fold in half, then in half again to form triangles, or else simply roll them up.

This makes 10 7in pancakes i know as this is how many i had yesterday:eat_arrow:eat_arrow:eat_arrow:D

Shrove Tuesday, also known as Pancake Day in Britain, is the day before Ash Wednesday and the start of Lent - 'Shrove' stems from old English word 'shrive', meaning 'confess all sins'. It is called Pancake Day because it is the day traditionally for eating pancakes as pancake recipes were a way to use up any stocks of milk, butter and eggs which were forbidden during the abstinence of Lent.

Did you all confess your sins??

I can remember silly ladies running down Lime Avenue in Ossie with their pancakes in a frying pan. The winner was the one who crossed the line with her pancake still in one piece!

Yup, I was a bit keen with the batter mix last night so had a couple for my breakfast. My wife was less than enamoured by the fifth one....think I may have miscalculated a bit there.

Aye in Holland they have "Pannenkoek Haus" thes are cafes/restaurants tha serve pancakes on a daily basis, mostly savoury but they also do desert pancakes, you can even get them with chips or other stuff but the pancake alone is usually sufficient. :)

I've just been into the local tearooms for a brew and nobody, not one person, had made pancakes from scratch. Everyone seems to be either getting pre-packed ones or these 'shake-n-bake' bottle efforts.

I was aghast.

People just can't be bothered to bake anymore, so flour is not in their food cupboard.

I have seven types of flour in my store, and a 60cm wall cupboard just containing baking ingredients only. Flour doesn't go off if it is stored right.

In that respect I am hopelessly out of touch. It's one of the kitchen essentials in my opinion and I couldn't make half of the recipes I use on a regular basis without flour. I suppose cornflour is out of fashion too?

Mind you, I just have the three types - SR, plain and strong white for bread.

My pancake batter is 'resting' in the fridge.......made from scratch.....by that I mean no ready mix for me.
The tinlids will be having the pancakes as dessert after a tasty Lancashire hotpot.

i forgot!!!! and as i dont eat eggs unless theyre fried and in a butty wi sausage and bacon and tomato .. i dont buy them .... as theyd go off otherwise ...

only had 8 pancakes this Tuesday all home made by me though
i did make sure i got the right recipe though as i made some pancakes on Sunday just to make sure i could still make them had 8 then too:D

Oh while i was making the pancakes i noticed we had loads of eggs and oranges in so i also baked a "Orange drizzle cake ":D

The tinlids gathered in the kitchen hoping that when I flipped the pancakes they would either stick to the ceiling or fall on the floor......happily, I was a 'flipping' marvel......and they tucked into pancakes with strawberries, cream, and strawberry sauce.....nothing as common as lemon juice and sugar.
