This is one of my all time favourite recipes, especially when I was at school.
EVE’S PUDDING FAT FOR GREASING 450g / 1lb COOKING APPLES GRATED RIND OF LEMON. I PREFER TO USE LEMON JUICE INSTEAD. 75g / 3oz DEMERARA SUGAR. 75g / 3oz BUTTER OF MARGARINE. 75g / 3oz CASTER SUGAR. 1 EGG, BEATEN. 100g / 4oz SELF-RAISING FLOUR. 1tsp OF MIXED SPICE ( OPTIONAL ) GREASE A 1 LITRE / 1 ¾ PINT PIE DISH. SET THE OVEN AT 180C / 350F / GAS 4. PEEL & CORE THE APPLES AND SLICE THINLY INTO A LARGE BOWL. ADD THE LEMON RIND / JUICE, WITH THE DEMERARA SUGAR. STIR IN 15ml /1tsp OF WATER, THEN TIP THE MIXTURE INTO THE PREPARED PIE DISH. IN A MIXING BOWL, CREAM THE BUTTER OR MARGARINE WITH THE CASTER SUGAR UNTIL LIGHT & FLUFFY. BEAT IN THE EGG. FOLD IN THE FLOUR LIGHTLY AND SPREAD THE MIXTURE OVER THE APPLES. BAKE FOR 40-45 MINUTES UNTIL THE APPLES ARE SOFT & THE SPONGE IS FIRM, SERVE WITH MELTED APPLE JELLY & SINGLE CREAM OR GREEK YOGHURT. SERVES 4 VARIATIONS INSTEAD OF APPLES, USE 450g / 1lb APRICOTS, PEACHES, GOOSEBERRIES, RHUBARB, RASPBERRIES OR PLUMS. |

ok so this aint baking but its a basic recipe.....its what i've just made for tea
Leek and Potato Soup 3 leeks, chopped into 1/2" cubes 3 or 4 potato's chopped into 1/2" cubes ( you need roughly the same amount of potato's as leeks, but its not critical, just chuck a few in...) 150g butter ( just a big lump of it will do, its not critical either ) salt & pepper some cheese Chicken stock ( maybe 1 1/2 pints ) Slowly cook the leeks in the butter for 10 mins without browning them. Season with salt & pepper ( to taste, i think its best with loads of pepper ) Add the potato's and stock. Bring to the boil & then simmer for 20 mins. Put half of the soup in a blender and blend till nice & smooth Put it back in the pan & stir for a few mins. Serve with grated cheese over the top of the hot soup ( so it starts to melt in ) and nice fresh chunky bread. |

its dead cheap even if you have to buy the stuff Emma...£1 for 3 leeks and then just spuds marg and stock, cheese is optional, dead easy

i love leeks, one of my favourite veggies, pity i didnt master the art of growing them last year, i'm too impatient (sp?)
i've got a beef stew in the slow cooker cooking for tomorrows tea too lol |
easy fudge brownies
4 ounces of chocolate
1 cup of butter, softened 2 cups of sugar 4 eggs 1 1/2 cups of flour 1 teaspoon of vanilla extract 1 cup of chopped walnuts Preheat your oven to 175 gas mark 4. Melt the chocolate and butter together in a bowl over hot water. Remove from heat. Beat sugar and eggs together in large bowl, add chocolate mixture. Stir in flour and vanilla, mix well. Fold in nuts. Pour batter into greased, 9 inch square baking pan, bake for 1 hour. Makes approx 16 |

These were always a favourite with my kids
..RASPBERRY BUNS.. 12 oz sr flour 6 oz butter or marge about 2 oz desicated coconut if liked 5 oz sugar,,,if you are sugar conscious ,,,,,or 6 oz if your not 2 eggs raspberry jam rub flour and marge together ( Like you would for pastry add sugar and beaten eggs and coconut until its like a dough,,if dry add a touch of milk but it mustn't be too soft,, roll out dough and cut with cookie cutter about 3 inch deep stick a hole in the top of each bun with a clean finger,,,and fill with a teaspoon of jam a tiny bit of coconut on top of the jam stops it from running all over in cooking brush with milk or egg and stick in nice hot oven for about 10/15 mins until golden brown,,, |
