Re: Corned beef hash.
I have always made my corned beef hash by frying some onions.......adding chopped up corned beef, slicing potatoes thinly and boiling them until they are soft....and then I throw in the fried onions and the corned beef.......sometimes I will add a stock cube. I have never thought of adding the corned beef and onions to mashed spuds.
We do fry up any leftovers though....and these are usually better than the original. This dish is best served with mushy peas and pickled red cabbage or beetroot. |

Re: Corned beef hash.
My potato filled skins isn't really a hash, but is a delicious way to use corned beef.
This is how they're made. Bake the spuds until softish. Cut in half, and scoop out the flesh into a bowl. Add corned beef, and raw onion, (raw onion gives it more of a crunchy bite.) Add salt/pepper to taste, and refill potato skins with mixture, and top with cheese. Return to oven until tops go crispy and the cheese melts. You can make them the day before, if you keep them in the fridge, and just reheat. I used to make them for supper parties, and my food snob friends couldn't believe they were so good, or that they liked common old corned beef.:D |

Re: Corned beef hash.
I can vaguely remeber corned beef hash ... what kind of corned beef does one use? Is it the canned stuff, or is it the kind one gets from the deli? If it is the canned stuff, what is the trick for keeping it from turning to mush?

Re: Corned beef hash.
You forgot the tomato sauce MUMMIBOO.
Mash spuds the normal way or use instant mash. Add any type of cornbeef, then add tomato sauce to the mixture. Sprinkle a bag of crushed crisps on the top and put under grill. Not made it since the children were little. |
